- 2 hard-boiled eggs (preferably cold – they will be easier to grate!)
- 2 slices bread, toasted
- 1 avocado
- salt and pepper, to taste!
- 4-5 rainbow mix cherry tomatoes (they make great presentation!)
- lemon wedges, for serving
As a note, here’s how I made my favorite boiled eggs! Fill the pan with enough water to cover the eggs, add 1 tbsp of salt, bring to a full boil. Gently spoon in eggs, bring water back to a boil, cover with a lid, then cook on medium heat for 12 minutes. Remove the pan from the heat, drain hot water and immediately run cold water thoroughly over eggs. Transfer the eggs to an ice bath. Let them chill for at least 10 minutes.
Grate hard-boiled eggs while toasting your bread!
In a bowl, mash the avocado (to the consistency you prefer) with a pinch of salt and pepper. Spread the avocado on the toast. Top each slice with the grated egg – pile it on high!
Add small tomato wedges. Sprinkle on an additional pinch of salt and pepper. Spritz with lemon and serve!
