Ania’s Iceberg Wedge Salad with Hard Boiled Eggs

Ingredients:                                                                                                                One Serving (double ingredients for two servs)

1/4 iceberg lettuce (outer leaves discarded, quartered through core so that each quarter holds together)

4-6 cherry tomatoes sliced in half 🍅

¼ of avocado sliced or if you prefer diced 🥑

2 hard-boiled eggs, one diced 🥚 one sliced in half

2 bacon slices cooked & diced 🥓

2 tbsp red onion chopped

1 tbsp crumbled blue cheese

1/3 cup chunky blue cheese dressing of your choice

black pepper (freshly ground) to taste


  1. Slice the lettuce head in half and again so there are four wedges. Remove the core & place one of the wedges on a platter.
  2. Dice the cherry tomatoes, the red onion, the hardboiled egg, the avocado and the bacon.
  3. Top the wedge with blue cheese dressing (this helps the other items to stick), cherry tomatoes, red onion, hardboiled egg, avocado, bacon & blue cheese crumbles. Sprinkle with fresh ground pepper.
