Ingredients: One Serving (double ingredients for two servs)
1/4 iceberg lettuce (outer leaves discarded, quartered through core so that each quarter holds together)
4-6 cherry tomatoes sliced in half 🍅
¼ of avocado sliced or if you prefer diced 🥑
2 hard-boiled eggs, one diced 🥚 one sliced in half
2 bacon slices cooked & diced 🥓
2 tbsp red onion chopped
1 tbsp crumbled blue cheese
1/3 cup chunky blue cheese dressing of your choice
black pepper (freshly ground) to taste
- Slice the lettuce head in half and again so there are four wedges. Remove the core & place one of the wedges on a platter.
- Dice the cherry tomatoes, the red onion, the hardboiled egg, the avocado and the bacon.
- Top the wedge with blue cheese dressing (this helps the other items to stick), cherry tomatoes, red onion, hardboiled egg, avocado, bacon & blue cheese crumbles. Sprinkle with fresh ground pepper.
